An antique table-style beaten biscuit brake, used for rolling dough to make old fashioned layered biscuits. A plaque to the base reads ‘The DeMuth Improved Dough Kneader and Beaten Biscuit Machine, St. Joseph, M.O.’ “Beaten biscuits” are a Southern culinary tradition first recorded in 1770 and are closely related to hardtack and oyster crackers. This piece has a marble top and is on a black metal base. It has a pair of rollers attached to its top, which are covered with a protective removable box. Its crank handle is wood.
